Quinoa salad with pine nuts
and dried fruit

Ingredients
– 1/2 cup quinoa.
– 1 cup chicken or vegetable broth.
– 3 o 4 dried apricot, small diced.
– 1/2 tablespoon white onion, finely chopped.
– 2 tablespoon piquillo pepper VALLE FERTIL, small diced.
– 1 cup raisins.
– 1 ounce pine nuts, toasted.
– 1 can 248gr corn, drained.
– Dressing:
– 2 tablespoon lemon juice.
– 3 tablespoons olive oil VALLE FERTIL.
– 1 clove garlic, minced.
– Salt and freshly ground black pepper.

RECIPES

In a pot, toast quinoa until golden brown. Add the broth. Cook and drain.

In a bowl, mix quinoa with the remaining ingredients.

Pour dressing over quinoa and toss.
